Kee Chan has over 15 years of expertise which includes Identity (concept and branding), Research (consumerism, distribution, & production), Design (interior/exterior design, graphic design, marketing, & multimedia), Construction planning/monitoring, and marketing consulting services to restaurants. Several known projects in Chinatown including Ahjoomah's Apron, Lao Sze Chuan Cuisine, Headquarters Hair Salon, Herb, Visual Feeder (https://www.visualfeeder.com), Dark Chefs (https://www.dark-chef.com), Zhou B Art Center (Centerline project, Zhou B Art Center Logo, Beijing  project, Bluewaters Island project in Dubai, and numerous other projects),  and numerous other projects.


Nationally acclaimed Chef and designer Kee Chan started his culinary career at Boston’s Suntory, an elite international Japanese fine-dining restaurant. He arrived in Chicago in the 80’s to open Mirai in Wicker Park. A decade later, he took his first crack at restaurant building with Asian fusion at China Town’s Mulan and Lure Izakaya, his Japanese twist on a gastropub; Making history, Chef Kee Chan opened Heat, Chicago’s first fresh-kill sushi restaurant that gained both notoriety and rave reviews.


In 2007 an economic downturn on the horizon forced Heat and Lure to close its doors. During this time, Chan founded KeyConcept Design (https://www.keyconceptdesigns.com), a firm that offers a full suite of interior, architecture, graphic, web design, social Media, public relations, and marketing consulting services to restaurants. KeyConcept Design took over several projects in Chinatown including Ahjoomah's Apron, Lao Sze Chuan Cuisine, Headquarters Hair Salon, Herb, and many more.


In February 2014, Kee Chan found his way back into the restaurant business with Strings, the first dedicated ramen shop in Chicago acting as a catalyst for the ramen craze to hit Chicago. To this day Strings is still regarded as one of the best ramen shops in the city (including #1 in multiple rankings).


In 2015, Chan reopened Lure Izakaya Pub in the new Lakeview location, as well as added a new Strings addition in Lincoln Park. With the new line up running, the restaurant group Dark Chefs was formed with the goal of managing, marketing, and growing the businesses. 


Outside of direct restaurant management and partnerships, Dark Chefs’ main mission is consumer education and industry talent promotion through special events with featured guest chefs on the cutting edge of innovation. Plate Your Dream events allow young up-and-coming cooks to run a kitchen for a night and create a menu with their vision of food 5 years into the future. Pop Life events showcase menus designed and executed by established industry-leading chefs from other Chicago restaurants including Alinea, 42 grams, Moto, and more.


The company team spirit is inspired by Master Chef Kee Chan.One of his inspiring quotes is:

Renée L. Rose, CEO & Co-founder


Renée L. Rose has always followed her inner voice and passion for whatever has touched her life’s journey. Renée's success is attributable to maintaining integrity, trust, giving to carefully nurture the right climate to flow towards successful outcomes, and acting as a catalyst to enhance the quality of life in society. 


​Renée L Rose operates as a power broker for key stakeholders by building and strengthening public/private partnerships to strategically move innovative project initiatives toward successful outcomes.  She has cultivated her over twenty years of experience and keen political insight by working closely with numerous other prominent elected officials, lobbyists, law firms, corporate executives, small business leaders, associations, non-governmental organizations, faith-based organizations, and government agencies. 


Ms. Rose founded and successfully operated Rose Consulting Service, Inc from January 2000. With over twenty years of experience her expertise includes government procurement management (government service delivery systems); government relations (lobbyist, public/private partnerships, strategist, and policy analyst,); public affairs (grassroots mobilizing, coalition building and establishing collaborative community partnerships); and community relations (social awareness, cultural competency, cultural diversity, and cultural adaptability). As a senior executive administrator, Ms. Rose assisted in the management and appropriation of over $1.2 for the state’s human service delivery programs and contractual providers. During her twenty years of employment with the State of Illinois, Ms. Rose assisted in improving the quality of life for thousands of Illinois residents.


Ms. Rose has accumulated a wealth of expertise in government/public relations with a history of extensive clientele list which includes WellPoint, Inc., and Subsidiaries; Mayer Brown LLP {Accenture, Assurant, AT&T, City Colleges of Chicago; Citigroup, Cottonwood Financial, Ltd.; Hertz Corporation; Illinois Alliance of Boys & Girls Clubs; International Game Technology; Meijer, Inc.; Metropolitan Pier & Exposition Authority; Midwest Generation; Nicor; Inc.; Northern Trust Corporation; Notebaert Museum; Novartis; Regional Transportation Authority; Rush Hospitals State Farm Mutual Automobile Insurance Companies; University of Chicago Hospital.  Mayer Brown LLP Clients: *Mayer Brown LLP restructured the law firm and discontinued the government relations section on 09/30/07.
